Chickpea "meatballs"

Is there anything more versatile then meatballs? Any meatballs, these made of meat and the vegan equivalent. 

They go well with sauces, as a snack, in sandwiches, with salads. Great at home and for packed lunch. And why not to wrap them in some flat breads? 

The vegan version of it has plenty of variety, as there are many different beans and pulses to choose from. Plus there is tofu, nuts...so many choices. The secret is the right texture. It needs to be coarse to have a bit of bite to it. The other thing is they need t hold their shape, even if cooked in sauces. 

For me the combination of chickpeas and psyllium husk does just that. Chickpea delivers texture and psyllium husk helps with binding all together. It brings everything together almost like gelatine. 

Another secret ingredient in these "meatballs" is a lot of fresh parsley. It somehow lifts them to the whole new level.
