Tomato and Banana Cake [vegan]

Yes, there is no mistake in the title - the cake's main ingredient is tomato 🍅🍅🍅. There are also bananas 🍌🍌 but that is nothing unusual in a cake. 
So basically it is good for you, 5 a day, right? 👍
I know it may sound a bit odd, but you really can't taste tomatoes in the baked cake. I must tell you, then whenever I make it I, always, can't stop eating the tomato-banana-sugar mixture ----> this is how you start making it, but essentially creating a smoothie.
The cake actually resembles Polish Gingerbread Cake [--> PIERNIK]. Piernik is a traditional cake for Christmas, but also can be baked at any time of the year. It does taste better in winter, because of all these warming spices in it. I always found Piernik a bit too dry, even though it is layered with some plum jam or buttercream. 
This recipe is moist enough for my and Js taste. 
The cake is not too sweet and it can be enjoyed as a breakfast as well. 
Making the cake takes no effort whatsoever as it is about 10 minutes + baking and cooling down time.

What do you need?
baking time 190°C [gas mark 5] for 50-55 minutes

baking tin 10x25 cm [ 4x10 inch] lined with baking paper or greeted with some oil and sprinkled with flour, so it does not stick to the tin

for cake:
400g = 1 tin of tomatoes [chopped, whole, does not matter, you will blend them too smoothie consistency];
200g = 2 very ripe bananas [200g of peeled weight];
6 Tbsp of sunflower oil;
100g of soft brown sugar [or any other sugar];
280g wholemeal spelt flour [you could use other flour, just add extra 20g to GF or plain flour. Wholemeal flour is a bit more "thirsty" so it can be less of it. I also think that with wholemeal spelt the cake taste better, more nutty and wholesome.];
1 tsp bicarbonate soda;
1 tsp baking powder;
1 Tbsp cinnamon;
1 Tbsp ground ginger

for icing [optional, but it gives some oomph. Of course you can use any other favourite icing 👌]
4 Tbsp blackcurrants [I use frozen, which need to be thawed before using];
3 Tbsp icing sugar;
1/4 tsp ground ginger;


How to?

1. turn your oven on.
2. in a large bowl, using hand held blender, [or in a food processor] blend together tomatoes, bananas, sugar and oil until smooth and creamy - couple of minutes. 
3. add all the dry ingredients [flour, bicarb soda, baking powder, cinnamon and ginger] and, with a regular whisk [not a blender] or with a spoon, mix together.
4. pour the mixture into the tin and bake for 50-55 minutes. 
5. let it cool on the rack before icing.
6. prepare icing once the cake is cooled.  In a small bowl mash all the icing ingredients with a spoon. You will basically create a raw jam - yum!
