Tasty spaghetti with vegan sausage

 The recipe is simple but rather effective in style and substance. So quick and easy to make that you will not be tempted to pop in to the shop to get a jar with ready-made sauce. Plus it is freshly home-made so it does not have that long list of preservatives and flavour enhancers we often find in ready-made goodies. 

When we are healthy we do not see what effect those lists of chemicals have on us, but for anyone like my husband J they always have a devastating effect. His eczema really blossoms when is fed with preservatives and man-made chemicals. I know that "in small amount" they don't harm us. But what is a small amount? Different people different conditions, different limits. 

Thats why, even if I do not have much time, I prefer [and need to] to cook something quick at home.  

The ingredients list looks like it has plenty of spices, but thank to that there is no need for a lot of salt. Of course if you wish, add more salt to the sauce. Always personalise any recipe. Just remember that if you serve it with parmesan then the cheese is rather salty already. 

Adding red pepper and carrots gives that perfect sweet balance to sour tomatoes, so I think it is a nice touch, but if you can't stand carrots [like my dad😉] then you could omit them and make a simpler tomato sauce. Also delicious.



What do you need?

2-3 portions 

250g dry spaghetti 

400g [1 tin] chopped tomatoes [if you have whole tomatoes, just chop them before using. When I have only whole tomatoes I simply squash them with my hand, but they tend to slosh everywhere 😂]
1 Tbsp tomato pure
1 large onion
1 carrot
1/2 red bell pepper
4 vegan sausages [for some extra protein, which we always need]
3 Tbsp olive oil
4 garlic cloves 
2 bay leaves
1 tsp dried basil
1/2 tsp sugar
1/2 crushed chillies
1/2 tsp ground sweet paprika
1/4 tsp ground pepper
1/4 tsp turmeric [helps to fight infections, but it has a rather strong flavour, so, if you do not want to have it as a dominant spice then use it with caution.] 
1/8 tsp cinnamon 
1 tsp salt [or more to taste, if needed]

How to?

1. cook your spaghetti according to the instruction on the package. 
2. in the meantime start making sauce. Chop all the vegetables into small chunks, crush garlic [always tastes better when crushed, not chopped]. Cut sausages into smaller bits. They are soft, so you need a sharp knife to do so.
3. heat up a large frying pan or a wok and first add olive oil. Then add all vegetables [except for tomatoes and tomato pure] and sausages. Stirring occasionally cook on medium for about 8-12 minutes.
4. add spices and cook for another minute or so, just to combine all.
5. add tomatoes and tomato pure. Cover all and cook for about 10 minutes.
6. after that add 2-4 Tbsp of "spaghetti cooking water" to thin it down and to combine all the ingredients better. 
7. serve with some vegan parmesan and chopped coriander or parsley.

Tip----> By the way, you could make some more of that sauce and store it in a sterilised jars. If you pour a very hot sauce into the jar and close it immediately then the jar should seal. And you have made a winter preserve - congratulations! 👍
