Simple vegan breakfast - tofu "twaróg"

 Let me just explain something. If this is not visible yet, I love food and eating. We [myself and my husband J] are both greedy as hell when it comes to good food. We won't eat everything, it needs to be rather homemade and tasty. Crisps and coke not for us [---> apologies to anyone who prioritises such snacks. But even You guys will admit snacks are not proper food, right?].

Lamentably Christmas is that sort of time when most of us eats well too much. Agreed? We definitely did, so today I needed something lighter and simpler. Normally in Poland making twaróg [maybe read : tfaaroogh] requires a curd cheese, or, as we call it, white cheese. It is a cow's milk set with good bacteria, to form a solid block of heaven. Full fat is the one to go, no any skimmed versions. In the UK such cheese can be purchased in any large supermarket now or any polish/continental store. It is widely available. I think it can be found in any part of the world as well, as Poles are everywhere and they need their food. As Italians have their pasta everywhere, Spaniards their chorizo, Poles have their food as well :-) [mentioning other nations would extend this post well beyond one page].

Unfortunately J can't eat dairy. He likes it, but his eczema likes it even more and it shows. To avoid his eczema flourish we needed to remove any dairy products from our diet. And, to be honest, I feel better as well. I loved milk and almost any cheese, but I often had painful stomach after drinking/eating them and my skin did not look great either. So it looks like dairy is not good for either of us. Interestingly though, when we went to my uncle, to a very unspoiled and rural Poland, we could drink milk straight from the cow without bay problems. Organic is the way to go?

So, because of J's eczema dairy is replaced with tofu and coconut yogurt. A friendly vegan version. Much lighter and it tastes great [the same, I was told]. 

The ingredients below can be adjusted to your taste. This is how easy it is to make it. 


What do you need?

200g firm or extra firm tofu [I use Tofoo naked or my own, homemade tofu]

150g -170g coconut yogurt [I use Coconut Collaborative brand, because it is thick, creamy and it tastes amazing]

5-8 radishes [chopped]

1/4 of red onion or some spring onions [2-3]

1-2 Tbsp lemon juice [start with 1, and, if you feel you prefer more sour taste, add more]

salt and black pepper to taste [about 1/4 of tsp of each of them, but always try and find the balance you prefer]

2 capsules of friendly bacteria [optional, as there is some in yogurt already, but I add it]

1 Tbsp nutritional yeast [optional, I sometimes add it and sometimes don't. It adds more cheesy taste though].


How to?

Well, this is going to be super easy!

Mush tofu, add all the other ingredients and mix it well. 

Serve with any good bread [in my case- home backed sourdough :-) ]. I often make a big batch and eat it on its own or you could serve it with a jacket potato? Pancakes? Possibilities are endless :-).

Seriously yummy!
