Saturday morning was a very different morning for us. Mostly I am the one who wakes up early, I have my breakfast [muesli with goat milk and some coffee] and then, an hour or so later J wakes up to have... almost nothing, because he does not have a clue what to eat for a breakfast since he stopped using dairy products.
This time though we both woke up at the same time and I decided to make some odd pancakes. No milk, no eggs...
Millet Grain and Banana Pancakes.
Surprisingly it went really well! We did not even sat down for our breakfast - just had it all as we were standing by the frying pan. Like kids waiting for treats! They were so light... Heaven!
So, if anyone would like to make them [I will, again!], here it is:
Ingredients:
about 200g cooked millet grains [I had it in the fridge as some leftovers];
2 very ripe bananas;
4-5 tbsp potato flour;
60-80ml coconut milk [mine was not thick];
2-3 tbsp water, if needed
3 tbsp sunflower oil
sunflower oil for frying
1. Simple - mix all the ingredients together in a blender. It need to look like a bit thicker pancake dough. You can see how it coats the spoon. If the dough is too thick add some more water. If too runny- add some more potato flour or even a spoon of millet flour.
2. Only before the first batch add some oil to the frying pan. After that the oil you added to the mixture should be enough. Fry it rather slowly as they brown easily due to high banana content in the dough.
I did not even bother with jam or any sirups. They were yummy without it. But J put some good amount of jam on his batch :-)
