Banana and Honey Oatcakes

Nature the mother of invention... OK, I did not invent food, but I created today these special and yummy Banana and Honey Oatcakes.



The allergy- loving diet still continues, so something quick, simple and dairy, fat and wheat free.
Preparation does not take a lot of time and it is quite a "handsome" teat once baked. Yummy even without baking, if I may add.
You are free to be inventions as it really does not matter too much  what proportions you use.
But for this particular occasion, here it is:

Ingredients:

3 very ripe bananas;
200g oats
50g sesame seeds;
50g sunflower seeds;
50g flax seeds;
handful of chopped dates;
handful of any raisins/sultanas;
4 tbsp date sirup;
2 tbsp clear honey;
150 ml coconut milk

Preheat oven to 180°C - gas mark 4.

1. Mash bananas with a fork.


2. To mashed bananas add coconut milk, date sirup and honey


3. Add all dry ingredients and mix together to a paste.



4. Spread on a baking sheet lined with baking paper and bake for about 45 minutes in preheated oven gas mark 4 [ 180°C ] until ... 


... golden-brown.
