When J got his results of allergy intolerance tests the biggest challenge for me was chocolate and cakes.
As we need to avoid [at least for some time to see if this may help] dairy [all sort of, even soya or almond milk], eggs, wheat, shop-bought chocolate is off the limit! And J can eat a good size bar of chocolate a day. And I am not talking about tiny Mars bars or anything like that [those he actually started avoiding years ago, as we could see the damage they did with his skin], but a a proper 100g or 150g piece.
It turned out [after few attempts, which were also tasty, but let's talk now only about this one] making chocolate is not a big challenge at all!
It vanishes even faster then the shop-bought item, which, I am still not sure, should make me happy?!
Here it is- very simple and effective:
CHOCOLATE number 3
Ingredients:
Makes about 9 medium size muffin cases
100g cocoa butter;
40g dark cocoa powder;
35g sesame seeds;
35g brown sugar [he can eat brown sugar and honey];
50g dates;
5 tbsp date sirup;
nuts - not necessary; [we can use macadamia, walnuts or brazil nuts]; unfortunately I can not use my favourite hazelnuts or almonds, not for now anyway...
1. Shred cocoa butter into the pan and melt either on a very, very low heat or over the pan with boiling water - I do both and it works fine, but if you are strongly interested in raw food then use the latter version.
2. In a food processor pulse, to get some sort of dust, together sesame seeds and sugar.
3. Chop dates.
4. to melted cocoa butter add date sirup, cocoa powder, dates, sesame seeds/sugar dust and stir with a spoon until combined.
5. If adding nuts - add them now - they can be chopped to smaller chunks.
6. Pour or spoon your chocolate into containers of your' choice - I use paper muffin cases as they are easy to remove once chocolate solidifies.
7. Either place it in the fridge for couple of hours or you can leave it over night - in any case it will solidify.
Although it still is chocolate it feels... light! Even I like it, and I really am not a chocolate fan.
