As I mentioned in TheFridgeCorner, J got his allergy intolerance test results. They are not that bad but dairy, wheat or eggs are, amongst others, the worst offenders. The challenge for me to cook without all of that. Not easy, if you were used to using those products every day. But I have been preparing myself a bit by reading some blogs with raw food, for instance. Just to get the gist of how to avoid all of that and still eat well. Golubka is right now one of my favourite, mainly because of it's pretty pictures. I have not tried any of Golubka's recipe yet, but I am sure I will at some point. Just need to get a dehydrator.
Right now I invented my own biscuits, trying to make sure they are all from the "GREEN ZONE" of J's test [ the RED and YELLOW zone will be a no for the next 2-3 months possibly].
Let's call them New-Diet Biscuits.
There is no wheat, eggs or dairy products in it and they still are really yummy! O, and no sugar.
Ingredients:
110 g dried pitted dates
50 g dried pitted apricots
1 raw banana
60 ml sunflower oil
100 ml water
2 tbsp honey [he is not allergic to that, but maple or agave syrup can be used instead]
60 g desiccated coconut
60 g oat flakes
50 g millet flakes
50 g of any seeds [sesame, sunflower, flax and pumpkin]
1. preheat oven to 170-180°C [gas mark 4], but some baking paper on the baking tray or, like me, grease it with some sunflower oil and sprinkle with oat flakes;
2. in a blender mashed together dates and apricots;
3. add banana, water, honey and sunflower oil and blend togheter for few seconds;
add all dry ingredients and blend until combined [30-40 seconds]; you will get quite a soft paste. Form biscuits using your hands - get messy!
4. Bake for about 30 minutes. Let them cool on the wire rack.
They are slightly gooey and they taste better and better with each bite. Yum!
