Faworki

Faworki [read: favorkee] is a real treat we [Poles] traditionally eat just before Lent. But, to be honest, there is no rule that it can not be eaten at any other time :-)
I think I could say that Faworki are biscuits which are fried. The dough is similar to pasta dough and they are fried in oil like doughnuts.
Not sweet not salty either but sprinkled after frying generously with icing sugar.

Ingredients:

300g plain flour [fine pasta flour is the best];
3 egg yolks;
5 tbsp of creme fraiche or sour cream [rather flat spoons; if you think that you need more because the dough is too dry you can add that while kneading];
1tbsp of spirit or plain vodka, or brandy;
pinch of salt;
oil for frying [I used 1/2 l of sunflower oil, but you can use any oil you like or even lard, as it was in the old days ;-D; lard actually gives a nice crisp]

1. sieve the flour and salt onto a clean work surface and make a well in the middle and add yolks and cream.


2. mix and knead together for a while until combined. Then bash it for about 3-5 minutes with a rolling pin. You should get a smooth dough not bigger then the ball in the picture.


3. Chill it for 1/2 hour in the fridge. Take the dough out and roll it out until is about 1mm thick [--->picture]. Do not use too much flour to dust the surface. It should not be too sticky. Too much flour makes the hot oil to burn quickly! 
I managed to roll out two rectangles about 23x43 cm

4. Cut it into smaller shapes about 2x12 cm. Make a small cut in the middle of each shape. Make the beautiful curls by pulling one end through the hole [---> pictures below]



5. heat the oil until is very hot. Fry Faworki for about 20-30 seconds on one side and turn them to fry for the next 10-15 seconds. They need to be golden brown. During frying they will puff up in places and that is the whole beauty of them.


6. dry the excess of oil on the paper towel sprinkle with icing sugar and enjoy! 


Yum! We [two of us- myself and my greedy husband] had it all in a day and a half. Only because he controlled himself, as he told me!!!
