Bread no 4 - Irish Soda Bread

I have been a bit quieter lately... It is not because I was not baking anything but because there is always SOMETHING when you start making plans. On the contrary I was baking a lot and I think it shows in mine  and J's waistlines now... Upcoming Christmas and our trip to visit families will not help getting rid of the weight excess either! O well, I guess, that is what the New Years resolutions are for!
So, not too get too grumpy that the clothes don't fit anymore, here is another tasty and the most easy bread ever :-D - Irish Soda Bread.
I must say, that I even enjoy the one from the shop [occasionally], but J does not, but this one, baked at home, he swallowed easily [ it is not his favourite though, as he says on every occasion!].
I partly did it because my dear Irish friend was always talking about it - how easy is to make and how tasty it is.
And it indeed is.


So here how I made it:

Ingredients:
250g strong white flour [+ some more for dusting];
250g wholemeal seeded bread flour;
20g of baking soda;
1tsp fine seasalt;
75g soft butter;
300ml buttermilk

1. Preheat the oven to 200C. Line a baking tray or just dust it with flour [I did that, but my tray is non-stick].
2. Mix all dry ingredients in a ball.
3. Add all the rest to your dry ingredients and mix together until just combined - do not overmix! It needs to be lumpy.
4. shape a ball and flatten it slightly. Cut a cross into the top and dust with some flour.
5. Bake for a bout 25-30 minutes until golden brown. Transfer to  a wire rack to cool.
Try it, especially in  the morning, with some jam and milky coffee. Yum!
