As I am trying a new cooking-crafting project [no details yet!] I have made some mouthwatering muffins yesterday! I was really surprise by myself with the result :-).
I tried to make something healthy and not too heavy, hence a lot of rolled oats used instead of flour. The soft brown sugar made it look and taste caramelly... And the tanginess of berries was just a perfect finishing touch!
So here they come...
Ingredients:
makes 12 muffins
160 g plain flour
110 g rolled oats
100 g soft brown sugar
2 medium eggs
1 1/2 bicarbonate of soda
170 ml plain yoghurt
55 ml sunflower oil
200 g mixed berries
1. Preheat the oven to 200C [gas mark 6]. Line a 12-hole tin with paper cases.
2. In a bowl combine flour, oats and soda.
3. Whisk eggs with sugar until smooth [2-3 minutes using electric whisker]. Add yoghurt and oil and whisk for few seconds together until combined.
4. Add egg mixture to the dry ingredients mixture and mix until combined, [it will look lumpy - that's fine!]. Fold in berries...
so it looks like this:
5. Spoon the mixture into the paper cases
Enjoy! Great for breakfast or any party, good for sharing - if you can bear to share ;-)

and bake for about 22 minutes until risen and golden.
6. remove from the oven and cool for 5 minutes before taking them out of the tin.
