Apricot, Strawberry and Mint Homemade Jam


We finished all jam jars from my mum, so I had to do something about it. And because it is much too far to my mum to go there whenever we are hungry or fancy something delicious, I made my own Apricot, Strawberry and Mint Jam.
It is more like fruit preserved in a jar them sugary spread. Very light and aromatic!
I think all the ingredients look as lovely together before cooking as they taste in a jam.


It does not take too long to make it and satisfaction if guaranteed!

So what I had at home to make it...

about 1000g  apricots;
about 800g strawberries;
250 ml strong mint tea [fresh mint leaves used for this];
300g sugar
2 bags dr Oetker gelfix 2in1  - it is a preserving powder for making jams. I always use it but you can use any product with pectin. It says on the pack that for 1kg of fruit 1/2kg of sugar needs to be used. I made my jam of over 2kg of fruit and mint tea and added ONLY 300g of sugar. It is perfect. Not too sweet and it can be eaten straight from a jar... which I just did a second ago...

So...
1. You will need about 8-10 small  jars. Place your jars [open] and lids in a oven, preheated to 100C, for the whole proces of making jam. It will be about 20 minutes, so they will get well sterilised.
2. Stone apricots and remove the green caps from strawberries. Cut fruit into smaller pieces [about 2cm sq].
3. Mix fruit with mint tea and drOetker in a large pan. Cook for until starts to boil.
4. Add sugar and stirring from time to time cook for about 10 minutes.
5. While still hot put jam into jars and close them tightly. I always put them upside down [as my grandma did] on a cloth until they are cooled.




Enjoy with an omelet, bread, scone, on its own or... as you like!
