Carrot Cake or Carrot Muffins?

Carrot Cake is one of my favorite cakes, as it is easy and quick to make, tastes great and looks even better!



The problem is just... washing up! I mean - the cake is messy and I always take the whole kitchen when I make it, but it is worth it! Plus... have I mentioned that I do not really do the washing up? ;-)
And for the price of one you get two treats as my muffins are made from the same dough.

Here it is - by the way, you do not have to be VERY accurate with measurements. It is not mathematics, it is baking with pleasure, so do not worry if you get couple of grams more or less of something!

Ingredients:
300 g of grated carrot;
300 g of plain flour [I use a mixture of plain flour and fine cornflour];
170 g sultanas;
1 orange [zest + juice];
3-4 eggs [if not too big I take 4];
220 ml of sunflower oil [I use Flora];
200 g of brown sugar;
1 tsp of soda;
100 g of almonds [you can add any other nuts you like];
70 g of seeds [like sunflower, pumpkin, sesame seeds, linseed...]
1 tsp of mixed spice - optional - if you do not like it do not use it; I sometimes do, sometimes do not :-)


1. Preheat the oven to 160C/Gas 3. Prepare some tins either for one cake or muffins.
2. Mix sultanas with the orange zest and juice in a small ball - leave aside.
3. Mix in another ball flour(s), soda and spices.
4. Crush the nuts and mix with the seeds.
5. In a ball whisk eggs gradually adding sugar, until it is creamy [5-6 minutes]. Add oil and whisk together for couple of seconds.
6. Sieve [to give more air] flour mixture into the eggs, add carrots, nuts, seeds and sultanas. Mix together with a wooden spoon until combined, like here:


7. Put in the tin(s) and bake:
 - muffins 25-30 minutes;
 - cake [11cm x 24cm] about 1 hour.
